Savannah, Georgia’s historic district is home to the Grey, a new restaurant that occupies a landmarked 1938 Art Deco Greyhound bus terminal. At the helm is chef Mashama Bailey, who is inspired by her grandmother’s Southern cooking, which she experienced as a young girl in Savannah. Bailey uses ingredients from local purveyors to create comforting dishes such as seafood boudin and smoked collard greens. The space, conceived by New York–based firm Parts and Labor Design, comprises a main dining room, a casual, dinerlike space, and two private rooms. Elements such as gate numbers on the wall and partitions made from safety glass salvaged from the original skylights serve as a nod to the building’s past. In fact, the old ticket booth was transformed into a new open kitchen. An outdoor area with smokers and a grill will host roasts and other special functions.
